Serves 3-4 | Low-carb meal, high protein!
1 large spaghetti squash
1 tsp oil (avocado FTW)
½ tsp salt
½ tsp thyme (fresh levels up)
1 lbRichards Regenerative Country Blend (nutrient dense, flavor bomb)
¼ cup panko
3 tbsp milk
2 garlic cloves, minced
1 egg
⅛ cup chopped basil + parsley
¼ cup grated parm or asiago
½ tsp oregano
½ tsp salt
¼ tsp red pepper flakes
Fire up 400°F: Halve squash, scoop seeds. Rub in oil, salt, thyme. Parchment sheet, roast 40 mins. Fork it—noodles ready!
Drop to 350°F: Mix meatball ingredients, just combined. Roll 20, bake 7 mins → flip → 7 more. Golden perfection.
Sauce game: Toss inRao's (zero sugar win). Simmer to bubbly. Shred squash into 4 bowls, load 5 meatballs + sauce per bowl.
Finish strong: Parm, fresh basil, red flakes.
