Join us for an unforgettable evening at Richards Ranch.

This year’s Ranch Dinner, in partnership with The Good Meat Project and Cream Co. Meats, is centered around one simple idea: Every Cut Matters.

We begin with a guided happy hour and live whole-animal butchery demonstration, followed by ranch tours and a long-table, family-style dinner under the open sky.

The menu features regeneratively raised grass-fed beef, pastured pork, locally grown produce, and thoughtfully prepared cuts that honor the whole animal — from nose to tail.

The evening concludes with dessert and a silent auction benefiting The Good Meat Project.

This is not a gala. It’s a working table — farmers, chefs, buyers, and community members coming together to celebrate regenerative agriculture and transparent sourcing.

Proceeds from the evening will directly support Good Meat Project’s educational programs and producer initiatives nationwide.

What to Expect

Guided Happy Hour & Whole-Animal Butchery Demonstration

Farmer, butcher, and chef introductions followed by a live whole-animal breakdown (limited to 20 guests).

An open air dinner on the farm

A thoughtfully curated meal highlighting lesser-known cuts and organ meats, prepared with care and served for the table to share.

Wines from our friends at Frenchtown Farms, reflecting the character of our regional soils.

Silent Auction

Featuring a 100-lb regenerative beef box and a 75-lb regenerative pork box, closing the evening over dessert.

Meet The Chef - Chef Greg Desmangles

Chef Greg Desmangles is the Culinary Director overseeing The Roost, Urban Roots Brewery & Smokehouse, Bawk!, Cervecería, Pangaea Bier Cafe, Good Neighbor, and Side Hustle in Sacramento.
A Sacramento native, Desmangles grew up in two large families where food was always at the center of gatherings. While others watched the game during holidays, he was in the kitchen alongside his mother, aunts, and grandmothers, learning the importance of cooking, hospitality, and bringing people together through food.
He began his culinary career in 2011, working for his uncle, Rob Archie, as a busser and dishwasher at Pangaea Bier Cafe. Driven by curiosity and work ethic, he steadily worked his way through the kitchen, eventually becoming Sous Chef. During that time, he helped lead the pub to back-to-back victories at the Sacramento Burger Battle.
In May 2018, Desmangles was promoted to Opening Chef of Urban Roots Brewery & Smokehouse in downtown Sacramento. The restaurant quickly gained a reputation for its high-quality barbecue, house-made dishes, and exceptional craft beer program, becoming one of the region’s most celebrated dining destinations.
In 2022, he was promoted to Culinary Director, where he now oversees culinary operations across multiple restaurants in the Urban Roots and Pangaea family. In this role, Desmangles leads menu development, kitchen operations, and culinary teams, continuing to shape Sacramento’s vibrant food scene.
